What is your favorite desert made with couscous? This is one that is very good....it is from Eunice Farmilant's " The Natural Foods Sweet Tooth Cookbook " , published in 1973. Couscous Pudding 3 cups apple (or any other fruit juice) 1 cup raw couscous 1/2 cup chopped dried fruit (I like apricots) 1/2 cup chopped walnuts or almonds ( I like almonds) 1/2 tsp. sea salt 4 Tbsp. nut butter ( I prefer almond butter) Bring fruit juice to a boil in a 2 qt. saucepan. Add remaining ingredients, bring to a boil again, and simmer for 2 minutes, stirring constantly. Cover and turn off heat. Let sit undisturbed for 15 minutes. Serve either warm or spoon into serving dishes and chill. Garnish with Soy Cream Sauce or fresh fruit glaze. Couscous Blueberry Surprise 1 pint fresh blueberries 1 cup fruit juice 1 Tbsp. lemon juice 2 Tbsp. arrowroot or cornstarch 4 cups cooked Couscous Pudding Preheat oven to 375 F. Rinse blueberries in cold water. Bring blueberries, fruit juice and lemon juice to a boil in a saucepan. Remove some of the liquid and use to dissolve the starch. Add starch to blueberries stirring counstantly. Remove from heat when thick. Spread the bottom of a cake pan with a layer of couscous pudding. Pour blueberries over that layer, then add remaining couscous and then cover with the remaining blueberries. Bake in oven for 25 minutes. This one is from " Cooking with Martha Rose...Herb & Honey Cookery " Martha Rose Shulman, 1985. Couscous with Honey and Fruit (Serves 4) 1 cup couscous 2 cups water 1 Tbsp. butter 1 apple, cored and chopped 1 pear, corred and chopped 3 Tbsp. water or apple juice 1 Tbsp. honey 4 Tbsp. raisins 1 tsp. ground cinnamon 1 1/2 tsp. freshly grated nutmeg plain low-fat yogurt and additioinal honey for topping Place couscous in a bowl and pour on water. Set sit 10 to 15 minutes or until soft. Heat butter in frying pan and add apple and pear. Saute a few minutes then add water or apple juice, honey, raisins, and spices. Cook, stirring over medium heat for 3 to 5 minutes. Stir in couscous and heat through, stirring. Remove from heat and serve, topped with yogurt, and if you wish, additional honey. Nancy C.
