Stir-Fried Bok Choy in Garlic Oil

 

3 tbsps. peanut oil

1 tsp. salt

1 1/2 lbs. bok choy

4 garlic cloves cut into 1 inch pieces

 

Heat the wok over a high flame for 1 minute. Add the

oil until it is very hot, look for a wisp of smoke.

Add the salt, garlic and bok choy. Use enough oil to

coat the vegetables thoroughly. Serves 4.

I do like bok choy. The only problem I encounter is. It is either quite

delicious or it has a slight bitterness. Is there a secret on how to choose it?

I buy baby bok choy, it seems to be more tender as

sweet.

I don't remember ever having a bitter bok choy....hmmm. I don't

know the answer to your question. I frequently substitute Napa

cabbage for bok choy in recipes....I like the way it looks better and

it tastes about the same to me.....I love all kinds of cabbages...but,

the prices are something else again. I can remember when an expensive

cabbage was 12 cents a pound!!

Oh you are so right about the price!!!!!!!! The oil prices have all the produce

so sky high it's a crime!!!!!!!!!!!!!!!
