Add the oil until it is very hot, look for a wisp of smoke. Add the salt, garlic and bok choy. Use enough oil to coat the vegetables thoroughly. I frequently substitute Napa cabbage for bok choy in recipes....I like the way it looks better and it tastes about the same to me.....I love all kinds of cabbages...but, the prices are something else again. I can remember when an expensive cabbage was 12 cents a pound!! Nancy C. I do like bok choy. The only problem I encounter is. It is either quite delicious or it has a slight bitterness.
