I made the eggplant non-meatballs as suggested with a few changes. I added cumin, chili powder and paprika with more bread crumbs. My husband suggested that I make them again, but as hamburger patties and service with a slice of cheese and sauted onions. I also made Angel hair with walnuts from my side dishes group. It was fabulous but very spicy. 8 oz. uncooked angel hair pasta minced garlic 1/4 c. olive oil 1/8- 1/4 tsp. crushed red pepper flakes salt 1/2 c. romano cheese (I used parmesan) Cook pasta. In large pan saute garlic and pepper. Stir in walnuts and salt. Cook until toasted. Add pasta. Add cheese. I also made green and wax beans cooked in veggie broth, garlic (I added too much) and a wonderful rosemary blend from sams. My dh loved it all (a big meat man). My youngest son loved the non- meatballs with ketchup (said it tasted like meatloaf), but didn't like the pasta. My youngest didn't like the eggplant (said it was too mushy -- and she's my biggest veggy eater -- go figure). My 17 year old son refused to eat when he got home, because dh told him it was eggplant and he said he must have meat. My oldest daughter wasn't hungry, so didn't try. I loved. So, for a first time entire veg meal we did pretty well, and other than my oldest ds, it was a success. Thanks for the recies! You could cook for years with our tried and true recipes and never duplicate, if you wanted to............ Isn't it fun to make new things.......... ? Keep on cooking. I think for a first completely vegetarian meal you got good results. Now remember sometimes the non-veg will be defensive even if they enjoy the meal. It's a change and often people don't like change. As long as you don't push them, it takes time. Incorporate new recipes from the files into your meals and don't say too much about it. As soon as you say oh this is vegetarian, or it's healthy because it doesn't have meat in it, then they already decide they aren't going to like it. Let them help you cook.
