Guest guest Posted March 19, 2008 Report Share Posted March 19, 2008 Does anyone have a copy of a cookbook titled, " Fields of Greens " by Annie Sommerville, 1993. I am looking at a copy on ebay...thinking of bidding on it but thought if anyone had a copy, I could find out how they like it. Another thing I would like to know is if anyone HAS a favorite vegetarian cookbook, what the title is and why you like it. I have a number of vegetarian cookbooks....my favorite is NIkki & David Goldbeck's, " American WholeFoods Cuisine " ...Over 1300 Meatless Wholesome Recipes From Short Order to Gourmet....Low Fat - High Fiber - No Refined Ingredients - Naturally Sweetened and Seasoned, 1983. I bought it right after it came out and my copy IS getting the worse for wear but I love it. This is one of my family (meaning kid friendly) recipes from it. Sloppy Beans 2 Tbsp. extra virgin olive oil 1/2 cup chopped onion 1/2 cup chopped green pepper (I alway left these out as my kids didn't like them in it) 4 cups cooked black, brown or red beans, drained 4 Tbsp. catsup 1 tsp. prepared yellow mustard 1 1/2 cups creamed cottage cheese 1/2 cup sour cream 4 to 6 whole wheat hamburger buns or slices of whole grain bread, toasted Heat oil in large skillet and saute onion & green pepper in olive oil for 5 to 10 minutes until browned. Add beans and cook, mashing gently, for 2 to 3 minutes. Add remaining ingredients and stir over low heat for 5 to 10 minutes. (Depending on cottage cheese, sauce will turn completely smooth or some curds will remain.) Serve hot over bread base with oven fries and catsup. I like to put a bunch of dill pickle slices on mine! I also add a dash of worcheshire sauce while it is cooking. My husband is not vegetarian but he will pretty much eat whatever I put on the table and doesn't complain if I don't make him eat vegetarian every night. He doesn't really know how often he IS eating vegetarian!! Thank God I married a man the second time around who is completely UN-PICKY as long as it tastes good.....yea!! After 25 years, I have stopped trying to convert the man.....I figure I love him and he loves me so why should I force my tastes on him. He has NO health problems at all and ate horribly before I met him.....here I am with high blood pressure, high cholesterol (if I didn't take Lipitor...with Lipitor it is 158 and my " bad " cholesterol is 84...my Dr. is happy), and a Type II diabetic and I have eaten SO RIGHT for all but a few years of my early adult life....go figure...that is why I say heredity plays a lot larger part in people's over-all health than we realize. It's vegetarian but not strictly vegan, uses some cheese and eggs in recipes. Goes into complex restaurant style entrees and menus. It has breads with sourdough, covers alot of ground, from soups and starters to grilling and desserts, more than 400 pages. What do you want to know about it? I think I paid $5 for my copy also on Ebay. It was listed as a hardcopy, but when a paperback arrived the seller wanted to refund all my money!?! I told him it was well worth the price. Another good one I recommend is " Fresh from the Vegetarian Slow Cooker " by Robin Robertson. Also I've got " The Ultimate Rice Cooker Cookbook " by Beth Hensperger " -- fantastic for making set and forget meals with the " fuzzy-logic " rice cooker. The " Fresh from the Vegetarian Slow Cooker " sounds good. I try to stay away from dishes that are mostly rice although I love rice and always have. That is one of the foods, even brown rice, that can really make a diabetic's blood glucose rise. I could eat rice every single meal.....breakfast with milk, butter and sugar, lunch with gravy....dinner with gravy....rice pudding with raisins, rice muffins, rice callas, rice pancakes, rice dumplings......oh the list is endless.... but, I can mostly only dream of all of those now-a-days. I use eggs, milk, and cheeses.....it is too hard to get enough protein when you also have to watch the carbs so strickly. Ah, well.......I do the best I can and that is all I can do. Guest guest Posted March 19, 2008 Report Share Posted March 19, 2008 Fresh from the Vegetarian Slow Cooker is great for those crock pot nights when you need to have some flexibility as to when dinner is served, or when you're busy and need to throw the ingredients in and let dinner cook itself. For easy dinners that don't take a lot of work, there's a couple of Moosewood books I've come to really appreciate: Moosewood Restaurant Simple Suppers (hardcover, 2005) Moosewood Restaurant Cooks at Home (paperback, 1994) I recently got Classic Vegetarian Cooking from the Middle East & North Africa and am looking forward to doing a lot of cooking from this one. I have it, and have used it quite a bit. The recipes, as written, do not fit into the " quick and easy " category, but many of them can be adapted to do so. I also have and use the Greens cookbook by Deborah Madison. My absolute favorite vegetarian cookbook is Cooking From an Italian Garden by Paola Scaravelli and Jon Cohen. It is definitely NOT vegan: cheese and eggs both figure prominently in many of the recipes. I have never made anything from this cookbook that did not turn out well.
