Guest guest Posted March 19, 2008 Report Share Posted March 19, 2008 I just got my cholesterol results back and the numbers were a tad on the high side. ARGH! I thought I was doing well. In my doctor's note about dietary suggestions, he says the normal things you'd expect about avoiding meat, poultry, and dairy products. But he also says " vegetable shortening (margarines and partially hydrogenated vegetable oils) should be eliminated. " I can see where this makes sense, but how do I replace margarine? What about Benecol? I actually have Benecol in the house and use it, but have to admit to using butter as well. Guess that's got to stop! That it is better for you than the others. And since I eat dairy and eggs, that was fine by me. There are some baked things that just don't lend themselves well to anything else. Nancy C. I'll check that out next time I'm at Whole Foods. Yes, I use olive oil as an essential part of my cooking. This is more of a " what do I put on my toast " kind of question. The second best thing is store-bought tomatoes. I also like my homemade soy yogurt (that requires fruit-pectin to set and act like a well-behaved yogurt). Another good thing is homemade pasta sauce with tons of sweet peppers, mushrooms and onions that I don't make with any more (olive) oil than it takes to saute the onions. Although sometimes I make pasta sauce with a bean-flour base, and that's good too, like gravy except no cholesterol. For baking I use olive oil or canola oil, though not much, and I love my whole-grain sourdough bread! Just flour, water, starter + salt, and long-rise natural cultures lower the glycemic index (or so I've heard). It's a tomato/pepper/eggplant spread, and it comes in mild and hot. It's available in specialty food stores that sell items from the Middle East and Eastern Europe.
