P/S Amy any tamale cooks out there?

They are wonderful without lard. I've been making them for well over 20 yrs go

to the Mexican recipe folder and you will see recipes in there.

I am so happy to see your posts..

 

My local ethnic store was selling " home made tamales " . I placed an order for 3

dozen. I told them they could not be made with lard. They called me the next day

and told me that they did not come out and that you have to use lard for them to

come out right. They refused to try again.

 

I have been told from several sources that tamales could not be made vegetarian

due to the fact that the masa has to be made with lard in order to come out

good.

 

could you please share your recipe for the masa? and for the fillings?

And I love sweet tamales too. Lots of cinnamon in the masa and a nice cinnamon

and raisin filling, I even use dates. Tamales are endless.

Actually, they can be made vegetarian using vegetable shortening

instead of lard. I've made them quite a few times and love them. I

usually will do one with black beans and one with kidney beans, then

jazz them up with different sauces. I love to do a spicy chipolte

sauce or a green jalapeno tomatillo sauce. Unfortunately, I don't

have the recipes with me at work, but I'll post them for you later.

There are also plenty of good recipes online if you just do a search

for " vegetarian tamales. "

You can take a hot dry iron skillet and roast the

corn oil will cause the dough to come out differently...I highly reccomend that

you use vegetable shortening over the oil any day....

Actually, they can be made vegetarian using vegetable shortening

instead of lard. I've made them quite a few times and love them. I

usually will do one with black beans and one with kidney beans, then

I have a Spanish neighbor who makes tamales for me using veg. shortening. They

come out just fine if she leaves out the meat. :)) Sonnie

Get Masa Harina...follow the re cipe on the back...sub vegetable shortening in

place of lard....use vegetable broth instead of water...I also add cumin and

lime juice to the dough...

I frequently make what we New Mexicans call " green corn tamales " ...simply

green chili, corn and cheese in the middle...

We also make some with red chili sauce vegetarian pinto beans, not refried,

and cheese....

stuff, roll and steam for one hour...if you need anything more...let me

know...I go in the frozen section and find frozen green chili to use....but

depending on your area you may not have that...in which case you would need to

roast your own...Don't do the canned stuff if you can avoid it....the flavour

will be next to bland...if that.
