Guest guest Posted March 22, 2008 Report Share Posted March 22, 2008 @@@@@ Mediterranean Eggplant Sauce - Arabic Uukkous Al- Badinjan 2 eggplants, about 1/2 pound each 4 large garlic cloves salt 2 T olive oil 1/4 t hot chili pepper 1 t paprika Preheat oven to 350 degrees. Bake the eggplants on a baking sheet for 30 minutes, until soft. Using a mortar crush together salt and garlic. After the eggplants are very soft peel off the skin while still hot and put the flesh in a small bowl. Chop this into pieces and mash with a fork.
