Zelda,

 

Falafel can be formed into any shape you want. You can by a box of falafel

mix at just about any modern store that caters to etnic varieties. Certainly

Whole Foods type places will have them also. You can shape them in to little

patties or into balls. Falafel is a middle Eastern food made from soaked beans,

fava, garbanzo, lentils,parsley, cumin, salt, pepper. Most middle easterners

make their own, starting from soaking the beans and grinding them and adding all

the ingredients. After you form them you fry them in oil. The outside gets

nice and golden and crispy while the inside is soft and delish. I make falafel

burgers and just put my lettuce, tomatoe, pickels, and any condiments I feel

like. On a hamburger bun and YUMMMMMMMMMMMMMMMMMM.

 

If you make them into balls, you fry the same and then you can make a yogurt

sauce or a tahini sauce. It is a sesame seed & oil type sauce.

Fantastic brand is my favorite for falafel. The main spice in it is coriander.

They are great. We serve them up with spanokapita, tabuleh, hummus, pitas and

salad fixins. We also have a few eateries around Fargo, ND that serve falafel

and I havent been anywhere that I didnt like the falafel. I did try a boxed

version from the grocery once that I think was Far Eastern brand vegetarian

falafel mix and it was very blah and did not hold together well.

Most falafel is made with chickpeas, but my favorite falafel recipe is

made with tofu. Very easy and some of the yummiest stuff to ever cross my

lips!

 

2 Tbsp vegetable oil

2 large onions, finely chopped

3 garlic cloves, crushed

1 1/4 lb firm tofu, drained

3 3/4 cups breadcrumbs

1/2 oz bunch fresh parsley, finely chopped

1 Tbsp roasted sesame oil

3 Tbsp soy sauce

4 Tbsp sesame seeds, toasted

1 tsp ground cumin

1 Tbsp ground turmeric

4 Tbsp tahini

juice of one lemon

1/4 tsp cayenne pepper

 

Sautee the onion and garlic in oil. I throw everything into my Kitchen

Aid stand mixer and mix well. Then shape into 1 " diameter balls and

place on a baking sheet covered with non-stick foil. Bake for 30

minutes at 350 degrees or until crusty on the outside but still moist

on the inside. Makes a pretty big batch--about 3 cookie sheets full.

Serve with hummus.

 

I have limited patience for cooking, so I use powdered garlic, dried

parsley, bottled lemon juice, and don't toast the sesame seeds.

Nonetheless, I still think they taste terrific!!
