The reason I'm asking is one or two family members are not able to process the gluten properly. I think it's referred to as Celliac (sp?) Disease. It is wheat gluten with the starch washed out, or else processed so the flour only has the gluten part. It is very high in protein but thsi protein is gluten wheat protein. Not the right food for someone with Celiac's disease for sure.
