Seitan Question

I've seen and heard the various discussion on Seitan. My question is this,

is there a way to make a gluten free version of it?

 

The reason I'm asking is one or two family members are not able to process

the gluten properly. I think it's referred to as Celliac (sp?) Disease.

Dennis, seitan is another name for 'gluten'. It is wheat gluten with

the starch washed out, or else processed so the flour only has the

gluten part. It is very high in protein but thsi protein is gluten

wheat protein.

 

Not the right food for someone with Celiac's disease for sure. Your

family members could maybe try Quorn instead? what about soy? tofu

and tempeh are also nice if one does not have soy allergies.
