ketchup?

anyone ever make their own ketchup? I found some recipes online (in an

attempt to slowly switch to making everything from scratch) The only

thing that concerns me is that i'm worried it will go bad - a bottle

normally lasts me a few months...

I have never made it but my mother, who was born in 1925, used to talk

about the catsup that my grandmother made. Mother said it was AWFUL!

But, that was then and recipes and techniqes have changed so it might

be worth giving a shot. It may be like homemade mayonnaise and have a

shorter shelf life since there wouldn't be any preservatives in it but you

might

be able to make it in small enough quantities that you can use it up fairly

quickly. Or make some and give half, or more, of it away as a gift...and keep

the rest. I have read recipes for both tomato catsup and for a catsup

made of grapes......oh, wait....and I think I remember hearing of one made

of blueberries. If you make some.....be sure to let us know how it turns

out.

 

That is one thing that I have never tried to make at home.

I've made it but with homegrown tomatoes. My grandparents, parents and

myself have made it and while ours was never as thick as store bought

versions - the flavor was wonderful. You can/jar it like make salsas

or spaghetti sauce.

 

Oh, my mom was born in 1926!

My grandmother that made catsup died when I was only about 10

so it could be she was not the greatests catsup maker on the block.

I don't remember her cooking all that well.

Knowing that good tasting homemade catsup can be made makes me

want to try it sometime. Thanks!!

you know, my mother experimented with a recipe and bought a large can of tomato

puree and a can of frozen apple juice concentrate...cooked them down and

wow...it was good!

What a great idea! I would NEVER have thought of freezing catsup!

 

I got my " Vegetarian Cooking for People with Diabetes " cookbook today....

came out in 1994 so I hope that it fits in with today's diabetic cooking

practices.

Am just setting down to look it over.

If you make ketchup...bottle up some and freeze the rest,

and then use it when you need it.

Especially since the commercial stuff has high fructose corn syrup in

it! (SO bad for us!)
