A small can of tomato paste seasoned the way you like it would make a

great ketchup. That way you would have the right consistancy without

doing anything other than stirring it. It would make a small amount so

no worry about it getting too old. I like mine sweet but one could add

any kind of seasoning they like. Even make it spicy and hot.

I sure won't buy bottled ketchup again..One reason is the plastic

bottles. If I can't buy it in a glass bottle I don't buy it. I pray

that they never put Veganaise in a plastic bottle. LOL

A co-worker told me that her husband won't eat ketchup because of the things

he saw when his class (when he was in grade school) did a tour of a ketchup

factory.

 

She won't eat it either after hearing the story. But she refused to tell me

what he saw.

As I read the posts in this thread, re: Ketchup/Catsup, I can hear in my

mind's ear the silly ditty this guy croons on Garrison Keillor's " A Prairie Home

Companion " (NPR) radio program: " KETCH-UP!...ketch-up!...Ketch-UUUUP! " (LOL!)

 

Seriously, I have made my own mayonnaise many times and have balked a few

times at the price of organic (sans corn syrup) ketchup/catsup. For some reason

it had never occurred to me to try and MAKE a bit of ketchup--mainly because

only recipes I had ever seen were in something like the " Ball Canning and

Freezing Blue Book " --and yielded a HUGE batch of stuff per recipe. I don't want

a pantry shelf full of bottles (or canning jars) of ketchup--just a little of

the stuff to use now and then!

 

Thank you for the suggestion of using the SMALL can(s) of tomato paste!

Doing that, I could make a batch...and not waste a ton of supplies if it wasn't

suitable. A SMALL amount would likely be used up quickly, not get moldy...and,

I THINK I even have the " perfect " size of empty glass jar to put it in! COOOOL!

Mike,

My favorite catsup is 'sweet and sour' so to create that flavor just

add a bit of vinegar or lemon juice. My stand-by seasonings are garlic

and onion powder. Most Catsup has a 'bite' which is a dash of chili

powder/pepper. Tomato sauce will be milder than tomato paste. The

apple juice will cut the acidic(sometimes bitter) taste of the

tomatoes. Let us know how long it takes for the tomato sauce and apple

juice to cook down to the consistancy of ketchup.

you could add anything you like for flavor...tabasco etc...but I think my mom

just did salt and pepper.
