Guest guest Posted March 27, 2008 Report Share Posted March 27, 2008 @@@@@ Roasted Garlic And Herb Hummus 2 cans chick peas 1/2 c of extra virgin olive oil, (to 3/4 c) 6 cloves roasted garlic 2 Tblsp fresh parsley 2 Tblsp fresh chives 2 Tblsp fresh thyme 2 Tblsp fresh rosemary Juice from half of a lemon Salt and pepper to taste Put the chick peas and garlic in the work bowl a food processor. Pulse until it becomes paste-like, adding a few tablespoons of water, if needed. Add the rosemary, thyme, parsley, chives, and lemon juice, and pulse again until combined. With the motor running, slowly add the olive oil until emulsified. Season with salt and pepper, to taste. Transfer to a small bowl. Serve with flat bread, pita chips, bagel chips and tortilla chips. You can even use your favorite vegetables to dip into hummus.
