In fact, if you are buying the large " regular " eggplant, I suggest you buy the male eggplants. The females have more seeds and, when they are large, the seeds can be very bitter. If it's a young eggplant, or a different variety, this isn't such an issue. To sex an eggplant, examine the end opposite the stem. A male has a little dimpled belly button. The female is larger, more oval, not so dimpled. Also, to " debitter " an eggplant, you can slice it, sprinkle with salt, and let it drain for an hour or so. This is a good idea if you are using it in a recipe where you will layer it, roll it, etc. Personally, I really like Japanese eggplants. They look more like cucumbers. Eggplant doesn't have a strong taste. But it does have a very mushy texture that some people object too -- particularly the " regular " eggplants. I did try the Eggplant non-meatball recipe. Neither of my daughter's were too enamored of it, but I accidentally bought a female eggplant and it was fairly seedy. (Forgot to check.)
