The Asparagus Fritters are a wonderful way to do asparagus for the children. My granchildren will not eat plain asparagus but when I cook up some Asparagus Fritters they will keep eating them until they are all gone especially if you have some dipping sauce with them. Canned Asparagus Fritters 2 eggs 1 tsp salt 2 tsp sugar 1/3 cup milk 1 Tbs salad oil 1 Tbs lemon juice 3 tsp baking powder 1 1/2 cups plain flour 1 large can asparagus pieces, rinsed and drained Open the asparagus pieces and drain then set aside. In a bowl sift the flour with the salt, baking powder and sugar. Beat the eggs, milk, salad oil and lemon juice together, then stir in the sifted flour and drained asparagus pieces. Drop spoonfuls of the batter in hot fat and cook for about 5 minutes, turning once. Drain well on paper and then serve with hollandaise sauce.
