Good thing to make when there are not so many fresh ingredients in the fridge... 1 1/2 cups mixed cooked grains, minced (I used a mix of cooked rices, black, brown, red, barley and wheat) 1 1/2 cups minced defrosted and drained frozen tofu 4 oz sun dried tomatoes, soaked in hot water, drained (save water) and blended 1/2 cup slivered toasted almonds, ground up into a meal 1/4 cup toasted dehulled hemp seeds 4 oz dried shitake mushrooms, soaked in boiling water and minced 3 medium onions, chopped ½ head of garlic, minced Dried herbs: oregano, basil, marjoram (to taste) Olive oil for sautéing Salt and pepper to taste Sauté onions in olive oil, add soaked shitakes and cook until they are soft and golden. Grind them up (or use blender attachment). Save water used to soak dried tomatoes and dried mushrooms. I used my immersion blender with the nut grinder attachment (and the regular blender attachment) to make this. Grind everything and put in a bowl. If it seems dry, add a little mushroom or tomato soaking water. Taste and adjust seasoning. Preheat oven to 350 F. Oil a loaf pan and pat mix into it. Bake for about 45 minutes to an hour.
