Guest guest Posted April 18, 2008 Report Share Posted April 18, 2008 Peach Cardamom Scones 2 cups unbleached all-purpose flour 1/2 tsp. salt 1/4 cup granulated sugar 1 tsp. cardamom 1 tbsp. baking powder 6 tbsps. cold butter, cut into pieces 2 eggs, beaten 1/3 cup vanilla yogurt 1/2 tsp. almond extract 1 cup diced peaches 2 tbsps. melted butter 2 tbsps. granulated sugar Preheat the oven to 375 degrees. Sift flour, salt, sugar, cardamom and baking powder into a bowl. Add the butter and rub into the flour until the mixture looks like breadcrumbs. Beat the two eggs, yogurt and almond extract together. Pour into the dry ingredients. Mix until just incorporated. Gently fold the peach pieces into the mix. Knead gently on a floured board. Roll out until 1/2 " thick. Using a biscuit cutter, or shape into 8 rounds or triangles. Place on a baking sheet, and brush with the melted butter. Sprinkle with sugar. Bake for 20 minutes, until lightly browned and toothpick inserted in the center comes out clean. Cool on a wire rack. Serve warm. Yields 8 scones.
