Guest guest Posted April 18, 2008 Report Share Posted April 18, 2008 Swedish Yellow Split Pea Soup (vegan with note) 1 Tablespoon Olive Oil 2 Large Onions, Chopped 2 Cloves Garlic,Chopped 1 Medium or Semi Large Potato, Chopped 1 Large Carrot, Chopped 1 Nice Long Celery Stalk, Chopped 2 Cups Yellow Split Peas 10 Cups Veg. Broth 2 Veg Brats, Cut into Rounds (I like the Yves Brand) 1-1/2 to 2 Tablespoons Marjoram Pinch Dried Dill Baby Pinch of Cardamom Salt And Pepper To Taste 1 Tablespoon Brown Mustard, make it heaping Saute onions and garlic in oil for 5 minutes. Add potatoes, carrots, celery and saute for 5 minutes. Add peas, and broth. Bring to boil. Add marjoram, dill, salt and pepper. Cover and simmer slowly for 45 mins. Add sausage rounds and simmer 15 more mins. Stir in mustard and serve.
