Does anyone have a recipe. I thought I would bake them first and tell him they are vegan later.....I know sorta sneaky but hey if it works..... It's lighter than honey and I love what it does for baked items Agave is 20 on the glycemic index, whereas honey is 80. If you want muffins put the batter in muffin tins and bake less time. I guess technically this is not vegan because it has honey. I like the honey in it, if you are vegan, you can substitute maple syrup. Vegan banana bread 2 tsp cinnamon 6 ripe bananas 2 heaping tbs honey 1 tsp vanilla 2 cups all purpose flour 1 tsp baking powder 1 tsp baking soda (we cant find this here so we have been making it without, but its probably better with) ~3 tbs canola oil handful of chopped walnuts (optional) pure chocolate chips (optional) option2: instead of vanilla and chocolate chips, use currants ground cardamom, and lemon zest. 1. mash bananas till chunky and add honey and vanilla 2. sift dry ingredients and add to banana mix 3. pour in greased pan (grease with canola oil) DO NOT OVERMIX! that is how baking gets hard and heavy. it is ok if it's a bit lumpy when you put it in the pan. bake for ~1 hour at 350 (I am using around 1 hour 10 min at 210 C in Ecuador) , <stephanielow wrote: > > Hi Everyone, > > My hubby loves banana nut muffins but with his diabetes and weight problem I hate to see him eat the ones from the bakery. Guest guest Posted April 20, 2008 Report Share Posted April 20, 2008 This is my own recipe for Banana Muffins - I make them every week and have them for Breakfast or snack and they are Wheat free – dairy free – egg free – sugar free BUT BIG ON TASTE! 3/4 cup Bob's Red Mill Wheat Free Biscuit and Baking Mix 1/2 cup quick cooking Oatmeal 1 tsp Baking Powder 1/2 tsp Ground Cinnamon 1/4 tsp Ground Nutmeg 1/2 cup mashed Bananas 2 tbsp applesauce 4 tbsp Agave Nectar 1/2 cup light Coconut Milk 1/4 tsp Banana Extract Mix dry ingredients; Mix all the rest in a separate bowl then combine with dry and stir until you have a batter. Spoon into paper muffin cups (or a well greased muffin pan), and bake at 400 for 20-25 minutes. The first batch I made got too brown on the top, so I laid a piece of Aluminum Foil over them once they got brown on the second batch. I prefer using those little muffin papers in the pan instead of greasing, so there is essentially less than 1 gram of fat per muffin (from the coconut milk). I found this recipe on the internet, I changed it to the version with the currants, lemon zest and cardamom when i first made it, I did not have chocolate chips but I had 2 boxed of bananas to do something with before they went bad. Later on I tried it with the chocolate chips and it is also very good. I alternate between making both versions.
