Basmati Rice Pilaf with Garam Masala - Indian

 

2 cup Basmati Rice, Or Other Fragrant Rice

1 tbl Vegetable Oil

1 x Onion Chopped

1 x Clove Garlic Finely Chopped

1 tbl Garam Masala, Bought Or Made As Listed Below

3 cup Stock, Or 10-Oz Can Broth Plus Water

Salt To Taste

Garam Masala (Homemade):

1 tbl Ground Cardamom

1 tbl Ground Cinnamon

1 tbl Ground Coriander

1 tsp Ground Cloves

1 tsp Ground Black Pepper

1 tsp Ground Nutmeg

 

 

 

 

 

1. Place rice in sieve and rinse until water runs clear. Drain well.

 

2. Heat oil in large non-stick saucepan. Add onion and garlic and cook gently

for a few minutes until fragrant but not brown. Stir in garam masala and cook

for 30 seconds until very fragrant.

 

3. Add rice and cook for a few minutes, stirring constantly, until rice is well

coated with onion mixture.

 

4. Add hot stock and bring to boil. Cook, uncovered, for about 5 minutes. Cover

and cook gently for 30 to 35 minutes for brown rice or 10 to 15 minutes for

white rice. Allow rice to rest for 10 minutes before serving. Season with salt

to taste.

I'm so excited that there are so many recipes in my digest today using garam

masala, as I just bought the spice mix at the grocery store this weekend and was

looking for some recipes. I think I'm going to try the basmatic rice pilaf

today. Thanks everyone, Kelly , FL
