Guest guest Posted April 20, 2008 Report Share Posted April 20, 2008 @@@@@ Masala Tea Cake 1/4 cup light butter, room temperature 1/2 cup sugar 1/2 cup SPLENDA No Calorie Sweetener 1 egg 2 cup apples, Well Chopped 2 tsp masala spice mixture 1 cup white all-purpose flour 1/2 tsp baking powder 1 tsp vanilla extract Preheat oven to 350 In a bowl, beat together the margarine, sugar, splenda, vanilla, and egg. Stir in the apples. In a second bowl, sift all the dry ingredients together. Add the dry ingredients to the moist, and mix thoroughly into a dough. Turn the dough into a greased(baking spray w/flour) 8-inch square pan, and bake for 45 min. (I check the cake sooner. At about 30-35 min.) Cool in the pan for 15 min., then turn cake out onto a rack to cool completely. Masala Spice Mixture 2 Tbsp ground cinnamon 2 tsp ground cloves 2 Tbsp ground cardamom 2 Tbsp ground ginger, powdered 1 Tbsp Ground black pepper Mix all ingredients thoroughly. Store in a tightly lidded glass jar in a cool, dark place. Makes 1/4 cup. I made it with light butter, but I am thinking unsweetened applesauce would work just as well, though I have yet to try it that way. I also replaced half the sugar with Splenda and my DH did not even notice. I found all the spices for the masala mixture at my local health food store.
