There are great cookbooks out there like the Nava Atlas 5-Ingredient Vegetarian cookbook, very easy tasty recipes in that book. Try making some of the sandwich and wrap recipes in our files. If you don't like certain veggies look for recipes using them and give them a try again. Are you missing the taste of meat? I think so if you said you almost gave up being a vegetarian last night. Maybe you need to incorporate more of the alternative meat products into your diet. I don't really think I am missing the taste of meat, I think it is just that I know how to cook more things that have meat in them. I think it is also because some of the stuff like seitan just sounds scary! I think I will try to look for kid friendly vegetarian recipes.
