I thought I remembered someone saying applesauce. What would be the exact amount for two eggs? Any other substitutes? Is there a file with baking substitutes that I didn't see? It's vegan, is packaged in box & can be found in most health food stores and I've seen it in some larger grocery stores, too. Guest guest Posted April 22, 2008 Report Share Posted April 22, 2008 Mayonnaise can be used as an egg substitute.....seems like it was 3 tablespoons of mayonnaise for one egg but I don't know if a soy mayo could be substituted or not. There is a cake called a Crazy or Wacky Cake that is eggless, butterless and milkless. I am sure you could google the recipe as the recipe has been around for at least 40 years. Nancy C. It looks kinda Wacky, so if you try it, please tell me how it turns out. I was going to make it for my daughter's 1st b-day, and may try to make it for b-day #2 this June. Guest guest Posted April 22, 2008 Report Share Posted April 22, 2008 Here you go......now this is for a chocolate version but I have made it many times without the cocoa but I usually use cinnamon, cloves and allspice and add raisins to make it a spice Crazy Cake. I have never made it " plain " but I don't see why it wouldn't work as well without cocoa or spices as well. This is a recipe off of allrecipes.com but it is identical to the recipe I use. You can also cut the recipe in half and use a9 x 9 inch pan. This recipe was originally, according to what I have read, first popular during the depression years when eggs, butter and milk were rationed but people still had a sweet tooth that needed to be " fed " occasionally. I first got the recipe when I was in 10th grade Home Ec. and have used it ever since. It was the first cake I taught my daughters to make since it is so easy and can be made in the pan. You can also mix the batter in a bowl and then use a greased and floured bundt pan to bake it it. It is the birthday cake I made for a friend's daughter's first birthday cake 38 years ago because the baby was allergic to eggs, milk and butter. I baked it in a 13 x 9 x 2 inch pan, then cut the cake up and reassembled it and decorated it to look like Raggedy Ann. Nancy C. Crazy or Wacky Cake INGREDIENTS a.. 3 cups all-purpose flour b.. 2 cups white sugar c.. 1 teaspoon salt d.. 2 teaspoons baking soda e.. 1/2 cup unsweetened cocoa powder f.. 3/4 cup vegetable oil g.. 2 tablespoons distilled white vinegar h.. 2 teaspoons vanilla extract i.. 2 cups cold water DIRECTIONS 1.. Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork. 2.. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing. Guest guest Posted April 23, 2008 Report Share Posted April 23, 2008 I have made the Wacky Cake many times as a cake and for cupcakes b/c my son is allergic to dairy and guests have said that it was the best chocolate cake they have ever tasted! It comes out really moist and perfect every time. I haven't tried turning it into a Yellow/Vanilla cake, however, but I've read ways to do it. (like omitting the cocoa and adding more vanilla extract? Good luck!
