Basil Marinara

 

1/4 onion, chopped

1 tablespoon olive oil

1 28 oz. can crushed tomatoes

1 28 oz. can pureed tomatoes

1 bunch parsley, leaves chopped

1/2 cup fresh basil, torn by hand

salt to taste

freshly-ground black pepper to taste

 

Saute onions in olive oil in saucepan. Add remaining ingredients and simmer 30

minutes.

Season with salt and pepper to taste. Serve over the pasta of your choice.

Makes 8 servings.

Hello, AJ. I love your recipes here and at the spicy group. I just want to

know if I could use fresh tomatoes with this? How many, if I can? I can't

wait for the fresh tomatoes and peppers.

Thank you Lena, Yes you can use fresh, I would say about 12 cups peeled diced

tomatoes, split in half and puree half of it. When my tomatoes come in and its

near the end of the season I freeze about 50 bags of 2 cup portions, They come

in handy in the winter.

Thank you for replying. Now I have a question about freezing tomatoes. I

tried the year before last and they turned out terrible. Do you do anything

special to them? I just cut them up and froze them because that is what a

neighbor told me but I think she told me wrong or I goofed.
