Guest guest Posted April 24, 2008 Report Share Posted April 24, 2008 Woo Hoo! Finally a recipe for VEGAN Special K loaf...Folks, you won't believe how great this is! TRY IT! Vegan Special K Roast 1 medium onion, minced Oil for sauteing onion 1 cup finely chopped pecans or pecan meal 1 cup finely chopped walnuts 2 - 12.3 oz packages of Morni-Nu extra-firm tofu (boxed type) 1 tablespoon McKay's chicken seasoning 1 1/2 Tablespoons McKay's " beef " style seasoning(all vegetarian) 1/4 cup nutritional yeast flakes 1 - 12-oz. box (or 7 cups) Special K cereal 1 1/2 cups soy milk Saute onion in oil until clear. Mash tofu with potato masher and add all the rest of the ingredients, mixing well. Spray a medium casserole dish.(I use the " flat " type of dish so that the mixture isn't too thick in the pan) with Pam. Pour mixture into casserole dish and bake at 350 for 40-45 minutes. Top should be brown and slightly crispy. Cut into squares and serve hot. This can be served plain, with ketchup or with brown gravy.
