Im making this for dinner, my kids love olives so its a good way to get them to

eat broccoli as well.

Olive and Broccoli Salad With Italian Dressing

 

5 cups dried rotini or bow tie pasta

1 cup prepared Italian salad dressing (I make my own)

1 6 oz. can tomato paste

1/2 tsp. hot pepper sauce

3 cups broccoli flowerets, blanched

1 cup halved ripe olives

1 cup thinly sliced red onion

1/2 cup diced cucumber

1 to 2 tbsps. pine nuts, toasted

 

Cook pasta according to package directions; drain.

Combine salad dressing, tomato paste and hot pepper sauce in small bowl; blend

well.

Toss pasta, broccoli, olives, onion and cucumber in large bowl. Add dressing;

toss to coat well. Sprinkle with pine nuts.

My daughter picks all of the olives out and only eats them! LOL I end up eating

all of the other stuff...

hahaha My daughters will eat everything, my boys will only eat the broccoli if

its mixed with something else, lol so i mix it all the time..They call it trees

LOL

She was eating raw broc last night, but it seems to be hit or miss. and, I made

the mistake of putting a pita on her plate and of course she ate that instead of

the other healthy things :broc and pizza burger.
