I love the flavor so I got some but not sure what vegetarian things it would be good in. (all I can find online is it's use in meat and fish!) Also I love to keep a snack size zip loc bag of fennel seeds in my purse. They help to settle an upset stomach, make your breath fresher and taste good. I love to eat them after an meal of Indian food. Most Indian Restaurants have a bowl of them, that they either bring to use or have near the check out area of the restaurant for you to spoon into your hand and eat. I am sure you can use Fennel seed in non-meat foods! I, too, love that warm, anise-like flavor and aroma of fennel seed--usually I use ground instead of whole seed, but fennel is one of my favorites. Today I made a sort of mixed-up stir fry (or something like that) and had chopped up baby bok choy leaves and stems, some baby portabella " baby bella " mushrooms, sauteed eggplant (pre-salted and cut into small slices)some garlic and olive oil, some onion, a little basil, thyme, some seasoned salt, some cubed firm tofu and...fennel seed (ground) sprinkled into it. I wouldn't say the fennel flavor was prominent, but I like how it gives some sort of savory mellow-ness to the rest of everything. Fennel is good in tomato-sauced pasta dishes, I think. If I were making veggie spaghetti, for example or other pasta in " red " sauce, I would definitely include some fennel as well as the expected " basil/oregano/garlic/onion--and maybe mushroom " flavors that, for me are standard fare with this kind of food. (Like basil, oregano, garlic and parsley, I feel that fennel seems to have a real affinity with tomato-y flavored foods!) I don't know as much about the recipe files here. Can one type in an ingredient such as " fennel " and come up with recipes that have that listed as some part of the ingredients in it? That might be interesting. I think the recipe site, allrecipes.com has that feature--you can look for recipes by typing in a an ingredient " keyword " . If you find some good ones, please post them here! I wish you the best in your inquiry! I made eggplant, mushrooms and zuchinni yesterday for lunch, sounds like I could have tried adding the fennel there!
