I just got a brain-burp a minute ago and wondered if there are good recipes anyone has (or maybe in the archives) for soups/stews/dishes using peanuts--raw or otherwise. I have seen in the past somewhere, maybe in recipes for peanut soups (African-originated recipes, I believe), and suddenly got the urge to play around a bit with this ingredient. I am one of those rare " Yankee/northerners " in the U.S. who love the southern delicacy, " boiled peanuts " . Suddenly I got a " taste-craving " for those and then wondered if other foods use the " ground-nut " (peanut) as an ingredient. Guest guest Posted April 30, 2008 Report Share Posted April 30, 2008 I'm cheating a bit on this answer because the ingredient is peanut butter instead of peanuts, but it's my favorite. It's from Vegetarian Times magazine, along with a few alterations on my part. Napa cabbage salad with peanut dressing (serves 4) Dressing: 3 tbsp smooth peanut butter 1 tbsp roasted sesame oil 1 tbsp brown rice syrup (or honey) 3 tbsp rice wine vinegar 1 tbsp soy sauce 2 tsp minced fresh ginger ½ tsp crushed red pepper flakes 1 small clove garlic, crushed Salad: 4 cups shredded napa cabbage 1 small red bell pepper, sliced (about ½ cup) 1 large carrot, coarsely grated If you whisk the dressing ingredients in the order listed, adding one ingredient at a time, then it will be perfectly smooth. I have eaten peanut butter (Jiffy, Peter Pan - trying to think of about 5 other brands but at the moment my brain is nill ---) and have never had fresh peanuts. (I even voted for Jimmy Carter!!) I would really enjoy finding a place in the west that grows peanuts. Do they need really hot weather to produce? Why can we not grow them in Oregon/Washington?
