We had homemade Vegetarian Me*tloaf, stir fried some fresh okra, and steam fried a medley of spinach, swiss chard and cabbage cooked together in a very small amount of vegetable broth and seasoned with some salt, a little oil and garlic powder. My daughters picked some fresh blackberries and made a homeade Blackberry Pie. It was so pretty and delicious. We had it with some Breyers natural Vanilla Bean Ice.Cream......... My children got me a large print, Twenty Wishes book, by Debbie Maccomber, which I can't wait to read. It is the next book in the Bloosom Street series and I know it will be great. Don't you just love books that come in series, so the storie never really ends. Smiles. My husband and the kids do a big yard project for me every mother's day and that is the best gift they could give me. I helped a bit too, but they did more. We have a huge yard with lots of landscaping, and it takes time to take care of it all, but I wouldn't have it any other way. I love our little Garden of Eden, here on earth..... It is so peaceful and full of serenity. What a great day we had here together. Happy Mother's Day everyone. Guest guest Posted May 11, 2008 Report Share Posted May 11, 2008 I made a dish for my Mom that was based on a dish she would make when I was younger. In a pot combine peeled and diced potatoes, carrots, and rutabagas Partially cover with water, cook until tender. When the vegetable mixture is almost done, saute large onion cut in chunks (be sure to use oil when doing this step). Then add veggie bacon which has been cut into one inch pieces. When the veggies are done, drain and coarse mash (so small chunks are still seen). To serve, scoop veggie mixture into soup bowl and scoop onion/soy bacon over it. I don't remember how Mom got the recipe, but I am glad I was able to adapt it to a vegetarian version so I can make it for her. Even my meat-eating brother liked it. We made a weekend of the event: Friday night- yummy pizza from a local spot with lots of cheese, onions, roasted peppers, and spinach, piece of mother's day cake Sat. morning- belgian waffle with lots of syrup, pineapple, and half an everything bagel with cream cheese (at home I have tofutti better than, but the hotel didn't have it) Sat. lunch- homemade mac-n-cheese with a salad, piece of Mother's day cake Sat. dinner- Cheesecake Factory French Country salad (only healthy thing I think I ate) and a Blue Moon Belgian Ale, then lots of martinis (celebrating a friends bachelorette party) Sun. breakfast- belgian waffle with lots of syrup, piece of chocolate cake, pain killer (for hangover headache) Sun. lunch- veggie panini with pesto and chips Sun. dinner- left over yummy pizza and a salad, piece of mother's day cake Anyone up for a diet? Guest guest Posted May 12, 2008 Report Share Posted May 12, 2008 We did not celebrate (his mom passed last year, mine lives in a country where they celebrate mother's day in December, and I am not a mom anymore...), unless you count spending lots of time in both gardens, planting a bunch of stuff, transplanting and making new beds as a celebration.....I loved it in any case. I even got artichokes on the ground :-) I suppose it was like celebrating mother earth. So we stayed out gardening until dark and ate leftovers. The exception is that we put together a beautiful salad from the garden's " pickings " that we collected while gardening. Curly leaf lettuce, green loose leaf lettuce, arugula fresh peas (sugar and snow peas) Grated garden turnips marinated in balsamic vinegar Fresh radishes Olive oil, vinegar, salt and pepper....yum, all from the garden. I added some olives (not from the garden, yet) Leftovers were chickpea toona with toaster oven heated frozen pita bread. I wanted some dessert but was too tired to make some. I was going to make something more elaborate, but when the time came, I decided this looked better. It was just DH and I here, and he was asleep most of the day after working overnight Saturday. My kids remembered to call so everybody is off the hook for a bit as far as keeping in touch, me included. We had Mutter Panner, Biriyani, Pakota, naan, dal, little cardomom doughnut thingys, Gobi Manchurian that was to die for, (Anyone have a really good recipe for this?) chai tea, etc., etc... 360./naturekeene7 My Website!
