Things to Do With Tapioca

Hi,

 

Does anyone have any milk free recipes for tapioca? It's a fantastic source of

iron and I'd like to find more ways of cooking it. Are there any milk

substitutes that can be used to make a " milk " pudding that don't result in a

chalky gloop? Thanks.

We made tapioca pudding with coconut milk/young coconut. It turned out very

well.

Hmmm... I don't remember exactly how we did. But I believe that we soaked

the tapioca, then added the milk from the coconut, as well as some canned

coconut milk and some sugar, vanilla and salt. Near the end we cut up the

young coconut and added that. We were trying to replicate a dessert from a

local Thai place, and while it didn't taste like what we wanted it to it was

really good. Sorry for the vagueness but usually our cooking is more

throwing stuff in until it tastes and looks right.
