Here's my story: In my refrigerator, I had a carton of soy beverage ( " Silk " brand, " plain " flavored). I didn't use it very fast, being that I had some vanilla, which I am more apt to drink or put with other things. When I got out the " plain " carton, I knew something was different, so I opened up the top (not the twist-off lid) and looked inside. My soy " milk " had solidified into little " chunks " and there was a clear liquid separated from the solids. It did NOT smell bad or " funky " , so I really didn't think it had spoiled. (I've had soy milk go bad before, and this definitely did not smell the same!) It smelled kind of sweet so I tasted the liquid--not bad. After a day or two, I also tried tasting one of the little solid " chunks " and it tastes mildly similar to tofu. Now my question: Do I have TOFU in this carton of strangely " changed " soy milk or what? I thought it took some kind of " agent " to ferment soy into tofu. This stuff is definitely NOT " gone bad " , but I am curious as to what it really IS! The tofu I am used to using is the very firm kind, commercially produced. I have never had the " silken " , but this is what I'd suppose silken tofu must be like, both in taste and texture. (BTW, I strained off some of the slightly sweet, clear liquid and added it to some milk I was scalding to use in home made bread today. I will see what that does when the bread comes out!)
