My favorite cookie recipe uses brown rice syrup as a sweetener, but I am currently out of it and I have some barley malt that I have never tried. They are similar in the sense that neither is very sweet, and both are pretty thick syrups, so they have a similar body/consistency. Malt tastes better to me and I think it would go well with the other ingredients you mentioned. Malt tends to be a little darker but it might depend on the type of malt (I used to brew beer).
