GREEN TOMATO MINCEMEAT

 

mince 4 lbs tomatoes - med blade

leave to drain overnight

In morning cover with cold water and cook for 1/2 hour - drain

 

add:

2 lb brown sugar 4 apples diced

1 lb seeded raisins 2/3 c vinegar

1/2 lb sultanas 1 t salt

1/2 lb currents 1 t nutmeg

1/2 c mixed peel 1 t cinnamon

nuts - almonds chopped 1 t cloves

 

Let all boil a few minutes and seal while hot.

 

Use in mincemeat pie, tarts and cakes.
