Guest guest Posted May 16, 2008 Report Share Posted May 16, 2008 Mango Flummery 2 large mangos, peel, slice 2 tablespoons lemon juice 1 cup orange juice 2/3 cup sugar or substitute 1/3 cup tapioca, quick cooking kind 1/2 tablespoon orange peel, grated banana slices, optional In a blender or food processor, whirl mangos until pureed; you should have 3 cups. Transfer puree to a 3 quart pan. Stir in lemon juice, orange juice, sugar, and tapioca. Let stand for 5 minutes.; then bring to a full boil over med-high heat, stirring constantly. Remove from heat; stir in orange peel. Let cool for 15 minutes.; cover and refrigerate until softly set (about 2 hrs). Makes 4 to 6 servings.
