Guest guest Posted May 25, 2008 Report Share Posted May 25, 2008 * Exported from MasterCook * New Potato Flan With Goat's Cheese Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/8 pound block shortcrust pastry 1 1/8 pound pack salad potatoes 10 slices vegetarian bacon 2 tablespoons basil leaves -- roughly torn 2 tablespoons snipped chives or spring onion tops 5 ounces goat's cheese -- crumbled into chunks 3 eggs 1 carton double or whipping cream -- (142 ml) 2 fl oz milk Heat oven to 190C/Fan 170C/Gas Mark 5. On a lightly floured surface, roll out the pastry thinly, then line a 23cm loose bottomed metal flan tin. Prick base with a fork, line the pastry case with greaseproof paper, fill with baking beans and bake for 8 mins. Remove beans and greaseproof paper and bake for 10 more mins until the pastry is firm and beginning to colour. Remove from the oven and reduce the heat to 180C/Fan 160C/Gas Mark 4. Meanwhile, cook the potatoes in boiling, salted water for 8-10 mins or until just tender. Cool a little then slice thickly. Roughly chop 4 vegetarian bacon rashers and fry in a small pan over medium heat until they begin to crisp. Mix potatoes with bacon and herbs and arrange in pastry case. Scatter evenly with cheese. Beat eggs, cream and milk together. Season well and pour carefully over the filling. Arrange the remaining bacon over the top. Bake for about 40-45 minutes until the custard is risen and just set in the centre and the bacon is crisp and browned. Leave to cool in the tin. When cool, ease the tart out of the tin and cut into slices. Serve with salad.
