Cabbage Chips

 

4 leaves of Savoy cabbage

2 tsps. clarified unsalted butter, I used a soy margarine

celery salt

 

Poach the cabbage leaves for 3 minutes in boiling salted water.

Drain on paper towels. Brush lightly with butter. Season.

Place on a rack and dry in an 175 degree oven for 1 to 2 hours until crisp. Let

cool.

I can't wait to try this recipe. Just planted cabbage in the garden

and was hoping I could come up with a few recipes for it.

Ben,

Where am I going to find " Savoy Cabbage " ? I never see this cabbage at

the store or farmer's mkt. Will any other type of cabbage work?
