Goat Cheese and Cherry Tomato Pizza

 

2 12 inch purchased, prebaked thin pizza crusts

1 1/2 cups grated mozzarella cheese

1/2 cup chopped, drained sun-dried tomatoes (packed in oil)

1/2 cup pitted kalamata olives, chopped coarse

1/2 small red onion, sliced thin

2 cups cherry tomatoes, halved

2 tbsps. chopped fresh thyme

1/4 cup unripened soft goat cheese, cut into small pieces

freshly ground black pepper

1/2 cup chopped fresh basil, optional

 

Preheat oven to 450 degrees. Place pizza crusts on baking sheets or pizza pans.

For each pizza, sprinkle pizza crust with half the mozzarella cheese. Top with

half the sun-dried tomatoes, olives and onion.

Arrange half the cherry tomatoes (cut side up) evenly over top, then sprinkle

with half the thyme and goat cheese.

Bake for 10 minutes or until cheese is melted and toppings are hot. Lightly

sprinkle with pepper and half the basil, if using.
