Welcome, Marla! Glad to have you! Your experiences in veganism and

community activisim are sure to be valued here.

S'mores, you say? Yumm! From where do you get your vegan

marshmallows? I had a conventional recipe that I had planned on

veganizing for years (never found the time). I just had my first

s'mores in about 15 years last month - oh how I've missed them! I

found vegan marshmallows at Pangea (Maryland vegan business with an

internet catalog), but I would like to try other kinds if they're out

there.

Again, welcome!

Hi, Nikki,

Thanks for your message. The s¹mores were yummy; we made them in the

conventional way with vegan marshmallows (melted marshies on a stick in a

campfire, then sandwiched them between chocolate and graham crackers). The

marshmallows we got were the ones carried by Vegan Essentials that have

since been discontinued. Sigh. Anyway, that¹s how we did it.

Thank you for your welcome!

We found some vegan marshmallows at www.tinytrapeze.com. We used them this

summer to roast over a campfire for s'mores. Even my non-veg nieces liked

them! :o)

The marshmallows at Tiny Trapeze use Emes gelatin. There was some

controversy earlier this year about whether or not Emes was veg*n. From

what I understand, it has definitely been proven to NOT be veg*n. If I

remember correctly, Emes is going out of business.

Emes gelatin is carageenan, I don't know anything about these

marshmallows, but the issue may be one of using the kosher/pareve

designation to determine vegetarian. Most kosher/pareve gelatins are

fish derivatives.

Actually Tiny Trapeze has BOTH non-veg and vegan marshmallows. The non-veg

DOES have gelatin, but the vegan does NOT. Here is a list of the vegan

marshmellow ingredients:

Ingredients

Organic Evaporated Cane Juice, Organic Rice Syrup, Water, Vegetable Jel

(Carageenan, Locust Bean Gum, Malto-dextrin), Pure Vanilla Extract,

Cornstarch, Pure Cane Confectioner's Sugar, Kosher Salt.

You can use this link to see how Emes gelatin has animal derived

products regardless of what is stated on the ingredient list. While

this certainly is upsetting to those relying on the kosher/parve status

and veg*ns, it is also a violation of labeling law. VIP has asked for

an investigation and that story is also on their website.

I called Tiny Trapeze this summer to ask them specifically about whether or

not they use Emes in their vegan marshmallows. They said they didn't list

it as such - they listed the ingredients in the Emes instead of Emes - but

that they do use Emes. Just going by what I was told in late July. I guess

they could have changed the recipe since then but they look like the ones I

saw then.

Emes has been proven NOT to be vegan or vegetarian. It was found to have

animal protein in it.

Hello and I am excited to be in this group.

I have only cooked Vegetarian food for the past six weeks. I feel awesome!!

I have two children 17, and 11 years old. My 17 year old loves eating

vegetarian. She is the one who came to me and asked for vegetarian meals.

After two weeks of eating veggies I felt and saw a change. I felt so good about

the choices of how to eat. My children actually offer to help cut up the food.

My husband loves the fresh food. :-) So I realized yeah we have become

Vegetarians. I live in Northern Virginia and am excited to be apart of this

group.

SunLit

This is a recipe I enjoy with several different things, brown rice, or pita

with hummus, or with cold pasta.

Pico de Gallo

Ingredients:

2 cups (canned drained) black beans

4 medium tomatoes, diced

1/2 cup red onion, diced

1/2 cup green onion, chopped

1/2 cup fresh cilantro, chopped

2 Tbs jalapeno pepper, minced (I like to use habanero peppers instead of

jalapenos.)

2 Tbs fresh lemon juice

1 Tbs chili powder

1/2 tsp sea salt

Combined all ingredients. I like to eat this cold.

This makes meals and grocery shopping so much easier have the whole

family going vegetarian at once. Congratulations to all of you!

Hiya Sun,

Welcome to the group. Thanks so much for the recipe. I added it to my

folder, so hopefully, I get to try it soon.

I'm Chrissy, mom of Grayson (3) and Ian (6). My fiance, Adam is in the army

as a 2LT, and so changing our ways of eating and our perceptions, as well,

has helped him with having to do regular physical training, and me keeping

my focus and energy up to chase after two boys. Ian is my picky eater, but

I am able to sneak in veggies into his salads, that he wouldn't eat plain,

but he does enjoy my vegan version of mac and cheese. Grayson on the other

hand, will eat anything I put in front of em, and he prefers veggies over

meat, most of the time, odd for a three year old, since I had never started

him out as a vegetarian.

I chose the switch a couple of months ago, and I'm still a newbie, but I

grew up enjoying vegetables and vegetarian dishes over meat casseroles. So,

my switch was really easy. My fiance, is very open minded on the dishes,

and he'll even look some up online when it's his night to cook. As you can

probably tell, I don't push for everyone in the house to follow my methods,

but I'm pretty impressed with how they're choosing more vegetarian meals.

I hope you enjoy your stay with us, and I look forward to more recipes!

Love and Hugs,

Chrissy

I think it is great your family as a whole is supporting your 17yo's desires and

you are all enjoying it. My mother was great at giving me support when I was a

young teen also and it made all the difference.

My family (husband and kids) are not veg. but we have been used to our

differences in eating for a long time now.

Congratulations and enjoy all the yummy recipes.

These recipes will perk up your palate. That is great news, I have

never known a whole family to go veg at one time, usually a few drag

their heels. Keep up the good work
