Peaches

Besides peach cobbler or scones, does anyone know of something to make

with the peaches? Breakfast, lunch, dinner, or dessert! We have quite

a few and shared them with a friend, but there are still so many!

Also, how about plums? We will be getting those shortly...Our trees

are so full!!

I dice them and add to salads, make sweet bread from them. You could slice and

freeze, I love frozen slices of peaches. How about a smoothie?

Yes, i just remembered, we will get plums by the weekend ourselves.

Small tree, so they will be just eaten fresh as desert. I will get a

bunch of peaches soon too from 3 medium trees, so I am eager to hear

(read) suggestions as well. What I plan to do though, is freeze a

few, they go great thrown in smoothies frozen like that. One frozen

peach, one frozen banana, a bit of yogurt/honey, heaven....

 

Peach jam takes a lot of peaches and it is so good, but a bit of

trouble to make as it best to do it as a canning project.

I use my peaches by dicing them up and adding them to my oatmeal in the AM with

some soy milk. AWESOME STUFF. Highly recommended. You can add some pumpkin pie

spice or a drizzle of maple syrup for extra goodness. =0)

This is from Cooking Light magazine...

 

Dipping Sauce

2T homey

2 t fresh lime juice

1/2 t grated lime rind

 

Quesadilla

1c firm peaches, peeled & thinly sliced

1T fresh chives, chopped

1 t brown suger

3 oz Brie cheese, thinly sliced

4- 8oz fat-free tortillas - can use whole wheat for nuttier flavor

Cooking spray

Chive strips (opt)

 

 

For sauce - whisk ingredients; set aside.

 

Ques.

Combine peaches, chives and sugar, tossing gently to coat. Heat large

nonstick skillet over med.high heat. Arange 1/4 of cheese and 1/4 of peach

mixture over half of each tortilla; fold in half. (I prefer to put 1/2 on a

whole tortilla and then just top w/2nd tortilla.)

 

Coat pan w/cooking spray. Place tort. in pan; cook 2 minutes on each side

or until lightly browned and crisp. Remove from pan; keep warm.

 

Repeat with remaining ingredients. Cut into serving wedges and serve w/sauce.

Garnish w/chive strips, if desired.

 

6 Servings

K Cal 157 Fat 4 g Carb 26 g

Chol. 14 mg Sodium 316 mg Protein 5 g

Fiber 1g %Cal. fm fat 23% %Cal from Carbs 66%

My sister makes a Quesadilla that is similar to this one but with mangos...very

yummy. I'll get the recipe from her and post it when I can.
