We have quite a few and shared them with a friend, but there are still so many! Thanks!! Also, how about plums? We will be getting those shortly...Our trees are so full!! Thanks!! How about a smoothie? Guest guest Posted June 4, 2008 Report Share Posted June 4, 2008 Yes, i just remembered, we will get plums by the weekend ourselves. Small tree, so they will be just eaten fresh as desert. I will get a bunch of peaches soon too from 3 medium trees, so I am eager to hear (read) suggestions as well. What I plan to do though, is freeze a few, they go great thrown in smoothies frozen like that. One frozen peach, one frozen banana, a bit of yogurt/honey, heaven.... Dipping Sauce 2T homey 2 t fresh lime juice 1/2 t grated lime rind Quesadilla 1c firm peaches, peeled & thinly sliced 1T fresh chives, chopped 1 t brown suger 3 oz Brie cheese, thinly sliced 4- 8oz fat-free tortillas - can use whole wheat for nuttier flavor Cooking spray Chive strips (opt) For sauce - whisk ingredients; set aside. Ques. Combine peaches, chives and sugar, tossing gently to coat. Heat large nonstick skillet over med.high heat. Arange 1/4 of cheese and 1/4 of peach mixture over half of each tortilla; fold in half. (I prefer to put 1/2 on a whole tortilla and then just top w/2nd tortilla.) Coat pan w/cooking spray. Place tort. in pan; cook 2 minutes on each side or until lightly browned and crisp. Remove from pan; keep warm. Repeat with remaining ingredients. Cut into serving wedges and serve w/sauce.
