So we are enjoying our every other week produce share from our local farm coop! This week she said look forward to fresh beets among our goodies. What to do with them? I am not a big fan of beets, I remember them tasting like, well, like dirt. But I'd like to try again. Guest guest Posted June 12, 2008 Report Share Posted June 12, 2008 If you peel beets, they shouldn't taste dirty. I put them in my smoothies and I juice them. When I want to cook them I usually steam them and then marinate in vinegar. Boring, I know, but I love to add them to salads. :-) Oh, and don't forget the greens. Yum. Some recipes cook the beets and greens together. Though, again, I tend to throw them into my smoothies or juice them. Boil, slice and cool. Put in bowl and mix with vinigar, a little sugar and salt and pepper. Chill. I also enjoy them boiled, sliced with butter. I have found that beets do not " bled " as much if you wash, scrub the dirt off and boil with the skins on. When they are cooked, the skins will slip right off and you can slice, or dice. Guest guest Posted June 12, 2008 Report Share Posted June 12, 2008 that is the way my dad's mom taught me to cook beets too. I scrub with those beets with a plastic scubbie and rinse. Add to boiling water and cook until tender. Then I drain the water and cover with ice water and slip those skins right off. Then I add fresh water to your pot and bring it to a boil. Slice your beets to desired size and drop in the boiling water. If cooking the beet greens add them(washed and chopped up) at this point, along with a tsp of cooking oil and a little salt. Cook just about 10 minutes at a low simmer, covered...... So incredibly good tasting and good for you. No gritty taste and fast to make.
