Last week I made the Mexican Lasagne and Curried Chickpeas. Yummie!! I love all the Moosewood cookbooks too, but most of them are pretty involved and I don't really like to cook that much...You can get this VT book for only $2.80 on Amazon. I LOVE Amazon.com... I have one kind of silly cookbook called Cooking with the Dead. It's from 'back in the day', mostly about the Grateful Dead with lots of pictures of flower children and some interesting recipes. Has anyone sent for the vegetarian starter kit from the PETA site? The kit has some really great recipes! We make them over and over. There's a shepherd's pie we make with seitan that's yummy and a SW recipe with Fritos on the top. Makes it kind of higher calorie, but it's still good and we can eat it for most of the week... which we don't mind doing since it's just the two of us!
