Guest guest Posted June 23, 2008 Report Share Posted June 23, 2008 Zucchini Date Muffins 3/4 cup wheat or oat bran 3/4 cup whole-wheat flour 1/2 cup sugar 1 1/2 tsps. cinnamon 1 tsp. baking powder 1 tsp. baking soda 1 egg, slightly beaten 1/2 cup nonfat plain yogurt 1/4 cup vegetable oil 1 cup grated zucchini 1/2 cup coarsely chopped pitted dates 1 tsp. grated orange zest Lightly grease a 12-muffin tin. Preheated oven: 400 degrees In the larger bowl, whisk together the bran, flour, sugar, cinnamon, baking powder, and soda. In a separate bowl, stir together the egg, yogurt and oil; add the zucchini, dates and orange zest and mix thoroughly. Add the wet mixture to the dry mixture, stirring just until moistened. Fill muffin cups three-quarters full. Bake 20 to 25 minutes, until muffins are lightly browned. Remove them from the tin and cool on a wire rack.
