Guest guest Posted June 25, 2008 Report Share Posted June 25, 2008 2007 and 2008 Vegetarian Cooking Class Final Dinner Menu Hi All This past school year with the class was wonderful. We had 33 teenages and 10 guest speakers and also gathered a few sponsores. We had donations from a few stores. This has been the best year for parents being on board and working with us, we even had grandparents involved as well. We have found doing this class that people don't cook certain vegetables because they don't know how. We are trying to change that. The teens that took this class took the recipes home and showed their parents how to cook the vegetables. Our class is to open the eyes of children and parents about eating healthy and that fast food is not the best food and that cooking can be fun. Its away to talk to your kids about serious subjects while having fun preparing food. It takes the pressure off the kids and parents it also brings the family closer if everyone is helping out. Here is a list of the recipes we used for the final dinner. Without you wonderful people this class would not be possible. Appetizers ============================================== \ Basil Cream Cheese Pesto Filled Tomatoes Sender: Mark Midnight We made 300 of these, wonderful flavor, Adults and children loved them, They all went. Comments: Want more. Excellent. ============================================== Cajun Deviled Eggs Sender: Jackie We made 12 dozen, Adults loved these, Little children not as much, W had 1/2 dozen leftovers, but they were eaten by the cooks. Comments: Spicy and wonderful. =============================================== Chipotle Salsa Sender Sissy We tripled the recipe and should have made more. This was one of the most popular dishes, We served it with potato chips, pita wedges and corn chips. Comments: Excellent =============================================== Hoisin Eggplant Balls Sender: Susie We made 300 of these and again they all went, Most parents had never had eggplant before and we converted them with this recipe. We cooked this recipe 3 times in class through the year at the request of the kids. Comments : Excellent, Could make a meal of these. =============================================== Hot and Spicy Nuts Sender: Joseph We made 10 batches of these, no leftovers, People nibbled on these all afternoon. Everyones favorite. Comments: Wonderful. just the right spice. =============================================== Asparagus with Honey-Garlic Sauce Sender: Petro B We used 30 pounds of asparagus and used the honey garluc sauce for dipping. It was wonderful, again we should have made more because this dissappeared quickly. Adults and children enjoyed it. Comments: Very tasty. Wonderful. =============================================== First Course: Soups and Salads and Biscuits/Muffins =============================================== Black Bean And Corn Salad Sender: wgf We made 5 huge bowls of this salad and again there was none left, One of the adults favorites, only a few children tried it. No leftovers. Comments: Very good. Excellent, want recipe. =============================================== Carrot and Lentil Salad Sender: M M We made 5 huge bowls of this as well. No Leftovers. The children seemed to like this the best of the 3 salads we served. Everyone wanted the recipe. Comments: Excellent. =============================================== Baked Potato Salad Sender Donna We made 5 huge bowls of this salad. No leftovers, This seemed to be the mens favorite salad. We think it might have been a little heavy for the ladies wit all the other food. The kids loved it and some had seconds. Comments: Excellent, Best ever, and want recipe. =============================================== Banana Curry Soup - {Estonian} Sender: Karla We wanted something a little different so we tried this soup, It tirned out wonderful we made 5 gallons, everyone got a taste and it was a hit. Everyone wanted the recipe. No Leftovers. Comments, Ecellent, Very Good and recipe please. ==================================================== Bitter Greens, Tofu and Soba Noodle Soup Sender: Rachel We made 5 gallons of this soup as well. Most of the parents said they didn't like tofu, Well we converted them with this recipe, they loved it. Great flavor. Children not as willing to try it but there was few that did and liked it. Comments: Great, Will try to make, excellent. ==================================================== Cream of Zucchini (Vegan) Sender: Cabrita We made 5 gallons of this soup. Great flavor. This was a favorite of the ladies and children. It went quickly and we should have made more. Comments: Excellent, ==================================================== Broccoli Cheddar Muffins Sender: Judy We made 6 dozen of these wonderful muffins, and 4 dozen mini muffins for the little children. These were a favorite for everyone. No Leftovers. Comments: Wonderful, Excellent, Recipe please. ==================================================== Vegan While Wheat Drop Biscuits Sender: Diane We made 7 dozen of these. The Children in our class loved these so much they wanted these for the dinner. We had made them in class twice. Everyone loved them, they are easy to make and seeing they can bemade anysize even little children can help. Comments: Excellent, Keeper recipe, wonderful. ==================================================== Main Courses ==================================================== Brown Rice and Tofu Baked Patties Sender: Fiona We made 150 of these and served them in small rolls with toppings of choice we had everything. No leftovers This is one of the most popular dishes ever in the class. Parents and children loved it. The Comments: Wonderful, my kids loved them and recipe please. They didn't know the tofu was in this recipe until the read it and still said they would make them again. Commentes: Wonderful, Excellent. ==================================================== Best Grilling Basting Sauce for Vegetables Sender: Phil We made 3 cups of this and used it on the following recipe, it was wonderful, it browned the veggies nicely and everyoe loved the flavor. Comments: Wonderful sauce, Want recipe. ==================================================== Grilled Vegetable Kabobs Sender: Not in files something the class made. We cut butternut squash, onions, cherry tomatoes, mushrroms and parboiled potatoes and thread on metal kabobs. We made 200 and basted with the above recipe. Comments: Great Idea, Wonderful. ==================================================== Baked Zucchin, Tomato and Potato Casserole Sender: Lorri We tripled this recipe and made 5 huge casseroles . People loved it. No Leftovers. Excellent flavor. Little children even liked it. Comments. Wonderful, very fresh tasting. ==================================================== Bombproof Baked Macaroni Casserole Sender: Fiona Personally this this is my favorite. We made 6 huge trays of this. It was so popular with parents and children We could have served this alone with just rolls and everyone would have been very happy. Comments. Excellent, Wonderful. Melts in mouth, Want mor, recipe please. and this was the cutest..My 3 year old loves it, thankyou . ==================================================== Dessert ==================================================== Pineapple Bread Sender: Donna We made 20 loaves of this bread, it was great, The childrens favorite. No leftovers. We should have made more or made gifts for everyone to take home. Comments: Lovelt, Excellent, Want recipe. Lite and moist. Very good. =================================================== Decadent Brownies Sender: Cin Cin We made 6 large trays of these and cut them smaller the usual. The children went crazy for these, the adults were a little full by the time these came out but we had no leftovers. Comments. Lovely, Excellent, Wonderful. ==================================================== Condiments ==================================================== Red Chili Mustard SenderL Pete W We made 1 batch of this recipe to serve with Brown Rice and Tofu Baked Patties, we had none left and everyone enjoyed it a little spicy but very flavorful. Comments. Best ever. Great. ==================================================== We also served a few large bowls of fresh strawberries. What a blessing for these families to have the gift to learn preparation techniques and taste these things. You've given these folks a gift of freedom from junk food and opened up a whole new world. Bless you. All these recipes sound wonderful. How fun it was to see all the reviews and to see they liked my broccoli cheddar muffins. They are good aren't they. I am proud they liked my summer squash soup (I was cabrita before my last email was stolen). I will be making it again soon as my summer squash have many flowers now, soon they will go crazy with new squash and this is a way to use lots of it (and low fat). Where are you guys located?
