And any type or shape or size. Make potato salad with purple potatoes and it

turns into a beautiful lilac colored dish.

my sister bakes her potatoes before the salad, rather than boiling, and it keeps

that potato flavor so much better. I will find out how long she bakes them for,

because they are never mooshy.

Enjoy. You know I have a few different potato salad recipes in the potato salad

folder. The baked potato salad is very good. Asian potato salad is too. Take a

look, the folder is in the salad folder.

Thank you so much Donna! You have saved my behind. We are having a cookout

over to my mothers on Saturday. This is the first one since my going veg.

I was trying to figure out what to make that everyone would enjoy. This

would be awesome and knowing my family, they would actually eat your Potato

Salad up! So, I will be following it to the letter. I will let you know

how it goes.

Hi gypsy,

Less is more when you make potato salad. You want it to taste like the

yummy potatoes so this is what I do. I don't add olives, pickles, relish,

Miracle Whip or any of those things.

The only time I will add eggs is if my nephew from out of state is here

visiting. He could live on eggs and he will complain if he doesn't see them

LOL

They have dark skins but when you peel them they are purple and when you mash

them or toss with mayo they turn lilac. I find them at Whole Foods and the

grocery chains. I wonder where they grow? I hope you can find a few pounds to

try.

I have seen beautiful pictures of those blue potatoes, but have never seen in

store or markets :( on the lookout for them.

At my whole foods every time I try to get them they are not there anymore. hmmm,

next time I will ask about it. To me they taste like red potatoes.

I like to put my potatoes, any potatoes, in the fridge. It makes some of the

starch turn to sugar and the potatoes taste sweeter.
