For 4 1 slice of wholemeal bread, crust removed 3 fl oz or 75mlof skimmed milk or soya milk 5 oz 150g walnut or pecan pieces 3oz of Cheese grated ( cheshire or cheddar) 1 large clove of garlic, crushed 2 tbs olive oil freshly ground pepper sprig of parsley to garnish soak the bread in the milk. Blend the nuts roughly in a processor - not too smoothly because you want the pate to have texture. With a fork, work the nuts, cheese, garlic and oil into the soaked bread. Season with lots of pepper. Press into a mould, or terrine and chill (i use a loaf tin with wrap inside).  To serve turn out and garnish with sprigs of parsley.
