I have yellow and green squash coming in and lots of cukes. I have been making dill pickles would love other ideas for my squashes and cukes... Guest guest Posted July 14, 2008 Report Share Posted July 14, 2008 I chop cucumbers up and mix them with fresh chopped tomatoes, some chopped basil, some crumbled sheep's Feta and a splash of balsamic for a refreshing salad. When I have too much squash, I slice them up and freeze them. Here's another recent discovery: The Green Mary. I was wondering what to do with more tomatoes than I could eat one day when I thought, " maybe I could make my own bloody mary mix. " I picked some celery, carrots, tomatoes and decided to throw them in the juicer. But I couldn't stop there - I tossed in several handfuls of French Sorrel, a jalapeno, some basil, dill and and chives. By the time I'd finished my mix was green, but tasted UNBELIEVABLY DELICIOUS.
