Guest guest Posted July 14, 2008 Report Share Posted July 14, 2008 Here are some things I do with Cucumbers: 1.Cucumber Onion Salad Slice some Cucumbers and dice some sweet onions. Mix together with some veganaise or Mayo and season with some dill weed, Ms. Dash and Season Salt to taste. Sometimes I add diced fresh tomatoes to this also. 2. I add it diced to the Ranch Dill Cucumber Salad that I sent a review on earlier. I don't just use it to decorate the top, but stir it into it. 3. I make slice it up or make spears with it as a side for dinner. 4. Add it to tossed Salad. 5. Marinated Cucumbers (this recipe is located in the side dishes recipe folder here) 2 T. Sugar 4 T. Red Wine or Rice Vinegar 2 T. Olive Oil 2 T. Sesame Oil 1 T. Braggs Liquid Amino's or Soy Sauce pinxh red pepper flakes & cliantro Mix together well and let sit until the sugar dissolves. 2 Green Onion chopped (tops and the white part) or some diced sweet onions 1 English Cucumber, slice thin. leave the skin on. Peel if using regular cucumbers. Add the Green Onions and Cucumber slices to the Marinade mixture above and let it set for at least 30 minutes, stirring frequently 6. Cucumber Yogurt Sauce ( this recipe is in the Grain folder in the subfolder Rice Folder with the Iranian rice with Lima beans and dill weed with Yogurt Sauces Recipe) Cucumber Sauce Make this first so the flavor will have time to combine better. 3/4 c.(6 oz. cup) of plain Yogurt 1/2 cucumber, peeled & finely chopped ( I used 1/3 of a European long cucumber that you find shrink wrapped and didn't peel it) 1 t. dried dill weed 1/4 c. fresh parsley finely chopped(optional) 1 T. Veganaise or Mayonnaise Salt to taste Tony Chachere's Creole seasoning to taste(optional) In a small bowl combine all of the above ingredients. Chill in the refrigerator. I have yellow and green squash coming in and lots of cukes. I have been making dill pickles would love other ideas for my squashes and cukes...
