Guest guest Posted July 14, 2008 Report Share Posted July 14, 2008 sometimes for my cousins annual BBQ I make my Kicked Up Salsa dancing Macaroni salad, some times a do a tomato, cucumber, mozzarella salad, this year I am thinking about bringing my red bean and spinach burgers. I am going to Chicago in August for our annual family picnic I am planning on making my red bean and spinach burgers and at least one other burger not sure what yet still experimenting. Guest guest Posted July 14, 2008 Report Share Posted July 14, 2008 Years ago, I had a well-liked recipe that used cooked rice, marinated with vinegar, a bit of veg oil, some chopped green onion and , I believe, celery. The original recipe called for adding to this cooked chicken, mixed with mayonnaise. Of course, I've changed it. I recently dug up the original recipe and substituted cooked beans (cannelini was what I used, but almost any bean will probably do) for the chicken in it. I also added chopped almonds, because the name of the salad is " Crunchy...(it's Bean, now) Salad " . It was good. I liked it as well or better than I liked the " old " way to make it. DH, who is terribly skeptical of any " salad " made with BEANS, let alone with marinated RICE--tried some on a bed of salad greens and admitted, " This tastes good! " He wasn't going to go all out and ask for seconds, but I was pleased that he actually tried it and gave it his approval. This salad would be my likely first choice of something to take to a potluck, picnic or whatever. It tastes crisp, crunchy, and, I think, is very satisfying to eat--filling, cool, but not heavy. The other " favorite " food I might take (and have taken to share at a potluck a few times recently) is a batch of mixed baked beans. This is another adaptation of an original recipe that called for added meat...but it is really good with just the beans. I try to find several kinds of beans that are different colors, sizes and shapes--it really doesn't matter which kinds are used. They get cooked until they are really tender and then I mix up a bunch of stuff (just sort of " cooking by nose and taste " ) to make it sweet/tangy/almost " barbecue-y " flavored. It gets some onion, hickory smoke liquid (or flavored hickory smoke salt), some brown sugar, honey, molasses, cider vinegar, mustard, some ketchup (organic!), maybe some Tabasco sauce or hot pepper powder...I just play with it until I like the flavor. The left-over " barbecue/baked beans " can be yummy spooned warm on a bun like a sloppy joe sandwich. I have also plopped a blob of it on top of a salad or rolled some into a tortilla for a " sweet, smoky " burrito-like thingie. (You can even dip it with chips!) I love having this stuff in the fridge to just heat up and have some the next day or two for lunch or a snack! And my DH is VERY fond of these beans! So easy to make, so inexpensive and so tasty! Those are my tow " options " that I usually think of for potlucks. I was at a BBQ yesterday usually there are several other vegetarians, however when I arrived I found out I was the only vegetarian, I made my red bean and spinach burgers and my black bean burgers, they were a hit.
