In the recipe files in the greens recipe folder you will see recipes for beet

and radish tops. I use both. Cook them up like chard. They are both

delicious.

out of a can and were pickled. Yuck !!

 

I did grow beets this year in my garden though for my sister. I was

wondering if the tops could be used like lettuce or chard and if they

were any good or if they were just compost.

Beets are related to chard (if memory serves). I use beet greens like chard

-- cooked or uncooked, throw them in salads, munch on while weeding and

such.

 

You might try frying baby beets in butter -- tres yummy. You can also grate

them raw into salads. Much better than store bought canned stuff.

I boil beet greens in water, adding a little salt and drop of cooking oil to it.

Boil just until tender.

They are delicious and one of my favorite greens.

 

Often times I boil up the beet roots, unpeeled until tender. Drain and cover

them with ice water. The skin will slip right off. Then slice or dice them up

and add to some boiling water and add raw sliced up beet greens, adding a little

bit of salt and a drop of cooking oil. Boil covered for about 5 minutes until

greens are tender, but still a bright color. Do not overcook the greens.

I eat beet tops as often as possible. Red and golden beets taste so much better

than canned.

Radish tops are delicious too and they ccok up real fast.

Beet greens are some of the most delicious greens available! I saute

them Italian style in olive oil with some fresh garlic and salt.

Jenn,

     Oh yes!  Beet tops are great to eat!   Also, chop up the stems, if  you

like--I have cooked them as often as I can when I buy beets " with the tops " at

the store or farmers' market.  They have a mild flavor, I think--I like beet

greens better than chard, although the flavor seems to be very similar.  You can

season beet greens any way you like...some people do like a bit of vinegar

sprinkled over them--I don't. 

 

      I suppose very young beet leaves might be all right mixed with other salad

greens and used raw that way.  More mature leaves, I think, have a stronger

flavor and would be less tasty. 

 

     Experiment with beet tops and see what you think!  I wish you good eating!

PS:  FRESH beet (roots) are so much better than " canned " ones!  I, too, grew up

thinking the canned beets were what real beets tasted like!  When I tried FRESH

beets, and cooked them myself.  (I steam them--and don't peel off the skin of

the roots until they are cooked and very tender!)  There is a great difference,

and I really love fresh beets!
