Guest guest Posted July 15, 2008 Report Share Posted July 15, 2008 I boil beet greens in water, adding a little salt and drop of cooking oil to it. Boil just until tender. They are delicious and one of my favorite greens. Often times I boil up the beet roots, unpeeled until tender. Drain and cover them with ice water. The skin will slip right off. Then slice or dice them up and add to some boiling water and add raw sliced up beet greens, adding a little bit of salt and a drop of cooking oil. Boil covered for about 5 minutes until greens are tender, but still a bright color. Do not overcook the greens. Radish tops are delicious too and they ccok up real fast. Also, chop up the stems, if you like--I have cooked them as often as I can when I buy beets " with the tops " at the store or farmers' market. They have a mild flavor, I think--I like beet greens better than chard, although the flavor seems to be very similar. You can season beet greens any way you like...some people do like a bit of vinegar sprinkled over them--I don't. I suppose very young beet leaves might be all right mixed with other salad greens and used raw that way. More mature leaves, I think, have a stronger flavor and would be less tasty. Experiment with beet tops and see what you think! I wish you good eating! --Laura B., in Illinois PS: FRESH beet (roots) are so much better than " canned " ones! I, too, grew up thinking the canned beets were what real beets tasted like! When I tried FRESH beets, and cooked them myself. (I steam them--and don't peel off the skin of the roots until they are cooked and very tender!) There is a great difference, and I really love fresh beets!
