Guest guest Posted July 15, 2008 Report Share Posted July 15, 2008 Hi to everybody, this is the first message I have posted, but I have learned so many great recipes from you all that I felt I just had to tell you, and thank you. I live in Seville, in the very south of Spain. In Spain there are practically NO vegetarians (none that I know of), but vegetables are eaten more than in the UK, at least. My husband and I are not " real vegetarians " , nor my daughter, well, they do not know they now are..........because I have been using your great recipes for several months, and nobody has realised they are not eating meat! Incredible!(I haven't mentioned that fact!). The whole family feels healthier and my Spanish friends are always asking to come round for Sunday lunch, and just haven't noticed that there is never meat on the menu! We love to hear others are eating from our recipes and enjoying them. I think as long as you present good vegetarian food rarely will a friend or guest look for the meat. There are certainly enough recipes in the files to keep you going for decades, LOL. I'm sad that your experience of eating in the UK was that not many vegetables are eaten. I have to say that this is not my experience at all. The UK has the highest per capita percentage of vegetarians in Europe and even the non-vegetarians that I know eat plenty of veggies. I was at a recent reception organised by City of Edinburgh council and all of the food on offer was vegetarian. Things have changed here considerably over the last 41 years since I became vegetarian and particularly in recent years. Of course, there are people who eat fish suppers and deep fried mars bars, but please don't write off the rest of the population because of a number of ill- advised people with unhealthy eating choices. I've only found chipotles over here in the last few years. I made a lovely potato and leek soup with chipotle chile from Fresh From the Vegetarian Slow Cooker but then I put myself off them them after a chocolatey chipotle chilli with coconut from Eat Drink and Be Vegan, which sounded lovely but just tasted overpoweringly of heat and smoke and nothing else.
