Guest guest Posted July 15, 2008 Report Share Posted July 15, 2008 We just made the " clayuda " recipe in the June issue. My they were flavorful and some kind of spicy! Whew! Clayudas Vegetarian Times Issue: June 1, 2008 p.40 Clayudas are a Oaxacan dish similar to pizza. Tortillas are slathered with a spicy black bean purée, baked, then sprinkled with various toppings. Ingredient List Serves 8 1 Tbs. canola oil 1 small white onion, diced (1 cup) 1 clove garlic, minced (1 tsp.) 1 tsp. ground cumin 1 15-oz. can black beans, rinsed and drained 1 canned chipotle chile in adobo sauce, drained 1/2 tsp. brown sugar 4 8-inch flour tortillas 8 oz. slaw mix 1/2 cup chopped cilantro 2 Tbs. lime juice Directions Preheat oven to 450°F. Heat oil in saucepan over medium-high heat. Add onion, and cook 5 minutes, or until translucent. Add garlic and cumin, and cook 1 minute more. Place onion mixture in blender with beans, chipotle chile, brown sugar, and 3 Tbs. water. Blend until smooth. Season with salt and pepper. Place 2 tortillas each on 2 baking sheets. Spread bean mixture on tortillas, and bake 5 to 7 minutes, or until edges become golden. Toss slaw in bowl with cilantro and lime juice. Season with salt and pepper. Top each clayuda with slaw, and cut into triangles. (I'm from the UK and things don't necessarily mean the same here)... 1 canned chipotle chili in adobo sauce - is this just a chilli pepper or something else? Could I just substitute a fresh chilli? 8 oz slaw mix - does this mean coleslaw mix? So do I just make a regualr coleslaw but with cilantro and lime juice and serve that with it? LOL The chipotle chile in sauce is a canned item, chipotle meaning smoked chile pepper (learned that from Food Network Star!) I imagine fresh is always best, right? As for the slaw, you could buy a bag of slaw w/o the dressing and use that or chop your own ingredients and toss them with the cilantro and lime juice. I hope you enjoy. It has no " sauce " added (mayonaisse, etc.). It is just a pre-mixed, ready-to-go coleslaw for those who don't chop their own veggies! I squeezed a fresh lime over the slaw mix, and added chopped cilantro. The result is a raw, colorful slaw modge-podge! If you want to view the recipe picture: www.vegetariantimes.com (search: clayudas) The peppers came in a can, about a 4 ounce can, in a heavy, red adobo sauce. It comes in a can. I find they add some heat and have a nice smokey taste. You could, but it would taste completely different. Chipotles in adobo are first smoked, and then stewed in a tomato-based sauce. If you used a fresh chile, you would miss out on both the smoke flavoring, which is what makes chipotles special, and the rich warmth of the sauce. They are at the end of the health food aisle opposite the herbs and spices. Alternatively you could try Lupe Pintos at Tollcross which has a lot of Mexican and Spanish food. This works out better for me since I find myself not using the rest of the can and it is wasteful, with the dried ones, just add the hot water to one, two, or as many as you will need, no waste!
